Mondays suck 😾
There isn't a Monday this roasted beetroot hummus couldn't fix though. Trust me 💯
Ingredients
- 1 15 oz can chickpeas;
- juice of 1 lemon;
- 2-3 small roasted beets;
- salt, pepper to taste;
- 1/2 cup tahini;
- 1/4 cup EVOO;
- 2-3 garlic cloves;
- 1/2 tsp ground coriander;
- 1/2 tsp ground cumin.
for serving:
- lima beans;
- pomegranate;
- cilantro;
- sesame seeds.
Directions

Combine all of the ingredients in your food processor or blender. Process until smooth and creamy. If hummus is too thick, you can water it down some with chickpea liquid or extra lemon juice. Adjust the spices.

Serve with your favorite toppings. I highly recommend throwing some pomegranate arils on top, you're probably like . . . i don't know about that but I promise it is so good, I was skeptic at first, but then I dumped a whole bunch in!
