In this post I'll take everyone to see my home garden and the food my wife cooks using vegetables from the home garden again. Of course all the vegetables I grow are chemical free vegetables. Our food is therefore food quite safety and health. It is food in northern Thai style. This dish is spicy stir-fried preserved bamboo shoot with chicken and chicken offal in northern Thai style.
In the rainy season, the bamboos in our home garden has bamboo shoots and we can harvest them for cooking many times. My wife likes to harvest them. This time she harvested 4 bamboo shoots. But the size of these bamboo shoots, they are not so large.
When harvesting bamboo shoots before cooking, My wife made preserved bamboo shoots. She peels bamboo shoots first.
Then chop the bamboo shoots and put them in the small plastic bags. Add water in the plastic bags.
Then add salt in the plastic bags. And pickled in salt water for about 2-3 days until the bamboo shoots taste sour. It's finished, preserved bamboo shoots.
Cooking spicy stir-fried preserved bamboo shoot with chicken and chicken offal this time, My wife harvests culantro, turmeric, banana leave, and spring onions from the home garden. There are also chilies that my wife had harvested and dried a few days ago.

How to cook spicy stir-fried preserved bamboo shoot with chicken and chicken offal in northern Thai style. Most northern Thai food has shrimp paste as an ingredient. Crush the onions, garlic, dried chilli using a pestle and mortar. Then add the shrimp paste in a mortar. And crush all ingredients using a pestle again to make curry paste.
Put a pot on the stove and heat the oil. Then add curry paste in the pot and stir-fry until the curry paste is cooked and fragrant.
Then add the chicken and chicken offals in the pot and stir-fry they with the curry paste until the chicken and chicken offal is cooked.
Then add the preserved bamboo shoots in the pot and add little water in the pot.
Then cover with banana leaves. And close the lid of pot.
Steam for about 20 minutes and add the glass noodles in the pot.
Stir-fry for about 3-5 minutes low heat until the curry is just to dry. Then add the culantro and spring onions in the pot, stir and turn off the heat.
It's finished, spicy stir-fried preserved bamboo shoot with chicken and chicken offal.
