Today, I am excited to share with you my experience with Nigerian traditional steamed Okpa, a delicious meal originating from the north which is called Bambara nut. For a long time, I've been a fan of Okpa, but I never thought I can make it at home. Whenever I craved it, I always look for street vendors who sell it and purchase some.
Nevertheless, everything changed when my children returned from their holiday at my sister's house in Enugu State. They so much loved how they enjoyed Okpa while they were there, even having it for breakfast! They praised my sister's husband for his exceptional preparation skills, which sparked my interest in learning how to make it.
This is my first attempt at making Okpa and I bet you, it was a success! The taste and texture were amazing, and I loved it and promise my children that I will purchase bambara nut in large quantity which I will grind and stored for future use. Let's move over to the kitchen and prepare it right away!
INGREDIENTS:
1.9 kg Bambara nut flour ½ Cup Palm Oil 4 Cayenne pepper Few chillies 1 Medium Onion 1 Liter of Warm Water A handful of Scent leaves Plastic bag (Optional)
RECIPE:
Step 1. Bring a large bowl and pour the flour ,add the palm and mix thoroughly with your hands until the flour turns a uniform yellow color. Don't forget to wash your hands 😁 .
Step 2. Add warm water slowly and stir with your spatula or spoon continuously to achieve a smooth batter. Then add in your chopped onions , peppers, leaves and salt or your preferred ingredients and stir very well .
STEP 3. Take your plastic bag or banna leaves and use your spoon or spatula and soop the batter into the plastic bag or wrapper halfway to allow room for expansion then tie the plastic bag or fold the Banana leaves Securely.
Step 4. Place the Okpa in a large pot immediately and add a little water and cover it and steam it for 45-60 minutes.
Enjoy spicy and delicious opka with your favorite beverages.
