After a long break I came here to to share with you the recipe of one of my favorites snacks known as potato fritters or cakes. It can be spice up with peppers for added flavor. My Children have really missed my homemade snacks that I do prepare for them. Today we are observing public holiday in my country to mark the Eid-ul-Mawlud which commemorate the birth of Mohammed. So my whole family is at home and I thought it wise to prepare my favorite snacks for them. They so much enjoy it and thank me for making their day with this yummy snacks. Without much Ado let's get to the kitchen and prepare this recipe.
INGREDIENTS:
3 Small Potatoes 3 Eggs 7 Small Chilies 2 Cayenne peppers 1 Cup floor 40 ml of cooking oil ½Teaspoon of salt
INSTRUCTIONS
Step 1.
PREPARE THE POTATOES:
Peel and cut the potatoes into smaller sizes annd boil until they are very tender.Then smash them while they are still warm . Don't forget to allow the mashed potatoes to cool slightly .
Step 2.
MIX THE INGREDIENTS:
In a large bowl , combine the small smashed potatoes with chopped peppers, sliced onions eggs and salt then mix well until everything is evenly combined.
Then gradually add the flour to the mixture and stir until it form a dough- like consistency. My mixture is not too wet if happens to be too wet ,you can add a bit of flour.
Step 3.
SHAPE THE FRITTERS
Heat the oil in a pan over medium heat. Once the oil is hot add the potatoes Fritters. I first flatten the dough on my palm slightly. Then fry until the fritters are golden brown and crispy on both sides.
Step 5. SERVE Remove the fritters from the oil and place them on paper towel to drain exess oil.
Serve hot with your favorite dipping sauce or with softdrink or as a side dish.
I enjoyed mine with Pepsi soft drink. It's crispy and taste so nice.
