As I am writing this, I am waiting for my daughter to pick me up because today is my son in law's BD party and I made these for him. Well, I am sure he will not eat all of them; my daughter probably will, if there is any left after the party, lol.
Anyway, I had a different desert planed to make for this occasion, however, things didn't turned out as I was hopping, lol. Luckily, energy balls always save the day and you can even make them quite presentable. Not to forget, they are delicious, full of nutrients and easy to make!

ASSORTED SUPERFOOD BITES Raw Energy Balls made with Dates, Nuts, Cacao and other Superfoods Raw – Vegan – Gluten Free – Refined Sugar Free Author: Lena's Vegan Living
INGREDIENTS for 16 • Medjool dates 2 cups (pitted, soaked for 15 min and rinsed) • Almond flour ¼ cup • Coconut oil ¼ cup (melted above steam) • Pumpkin seeds ½ cup • Puffed quinoa 1 cup • Cacao powder 2 tbs • Maca powder ¼ cup • Flaxseed powder ¼ cup /2 • Pink Himalayan salt ½ tsp • Pure vanilla extract 2tsp • Tray • Parchment paper
COATING • Matcha powder ¼ cup • Red beet powder ¼ cup • Cacao powder ¼ cup • Almonds crushed ½ cup
PROCESS • Start blending the dates in a food processor by pressing pulse button. • Gradually keep adding all the rest of ingredients except puffed quinoa and pumpkin seeds. • Blend until smooth, transfer into a bowl, add the seeds and quinoa puffs and mix gently but thoroughly. • Cover with lid and place into a refrigerator for 1 hour for the mixture to cool so it’s easier to work with. • In the meantime, line your tray with parchment paper. • When ready, start making balls by using mini ice cream scoop or spoon, scooping 2tbs of mixture per ball. • Roll each in your palm and place on the tray. • When ready, store those you want to coat in Matcha and Beet powder into a freezer for one hour. • The ones you like to coat in crush almonds, you can dip immediately. • For Matcha a Beet powder is best to use small sifter. Just separate the once you would like to coat with your chosen powder on parchment paper and lightly dust them using a sifter. Turn them around ad repeat until all sides are covered. • Store them in a sealed container and keep in a refrigerator. If you decide to make more, you can also store them in a freezer as long as they are sealed well.
