Sesame & Marmite Cheese Straws with a Twist - Hive Top Chef!

Nutty, crunchy roasted Sesame Seed for sure lifts baked goods to another level; Bread, Buns, and Cookies, plus a host of others.
I'm not keen on fast food, so often make homemade burgers with an authentic ground beef patty and all the trimmings. I also don't settle for anything less than a Sesame Seed Bun.

This pale tiny seed of course has many health benefits, but one would need quite a bit more than just a sprinkling on a bun or a cookie!

I'm not here to talk health though, tonight I am cooking for Qurator's: Hive Top Chef! | Sesame.

When I saw the theme of Sesame, I knew immediately what I was going to bake; an old favourite Marmite Cheese Straws. Crispy, crunchy, and packed with flavour, the ideal party snack that always disappears fast. 20241008_163607.jpg The recipe I'm sharing made 60 cheese straws. The recipe calls for mature cheddar, which I did not have, so I added a little extra cheese. It was nutty, crunchy, and very cheesy!

Ingredients

The Recipe

  • 500ml Cake Flour
  • 10ml Baking Powder
  • 3ml each - Paprika, Cayenne Pepper, Crushed black Pepper, Seasoning Salt
  • 170 grams yellow baking Margarine (the cheese straws break easier if you use butter)
  • 500ml grated Mature Cheddar Cheese
  • 1 Egg beaten with 45ml Milk
  • Approx 60 grams Marmite (half a small bottle)

Sift dry ingredients Cut margarine into cubes and work through with two knives, then mix with an electric mixer till it resembles fine breadcrumbs Add cheese, roughly mix through, then add liquids and knead to a smooth dough

Cheese straws 1.jpg Shape dough into a ball, and flatten with knuckles or fingertips, before rolling it into a rectangle Spread Marmite onto half a section of dough, sprinkle a little extra grated cheese on if you wish Fold over, and seal edges

Sprinkle the work surface and top of the dough with sesame seeds and a dusting of flour

Roll out thinly - approx 5mm, cut into fingers approx 15mm wide, approx 12cm long Thought I was back at the drawing board with all these measurements;) 20241008_145107.jpg Brush with an egg-wash (1 beaten egg mixed with a little milk) Dip top into sesame seeds, then twist to form a twirl (start at the centre to avoid breakage) SHape trimmings into rings to bundle cheese straws Cheese straws 3.jpg Bake at 200Β°C fan oven for approx 8 min, cool on wire rack Cheese straws bake.jpg 20241008_161359.jpg 20241008_160158.jpg Time to sit back and enjoy a glass of your favourite wine, and snack on delicious Sesame & Marmite cheese straws.20241008_164040.jpg
