Hello all food lovers in this community! Today I wanna share to you one of my favorite dish --Stir Fry Bitter Melon with Egg.

The Stir Fry Bitter melon with egg or also this is popular in Cebuano known as Ginisang ampalaya with egg is a simple and healthy Visayan recipe made with bitter melon, eggs, and spices like garlic, onion, and tomato. It’s being prepared for about 30 minutes.
This kind of dish is favorite of my family for it is just quick to prepare and its rich in iron --good for those who have an anemia or lacked of iron.
Here's the basic ingredients of this recipe:

Ingredients - 2 medium ampalaya (bitter melon), sliced thinly - 2 tablespoons salt (for prepping the ampalaya) - 2 tablespoons cooking oil (canola or vegetable) - 1 medium red onion, sliced - 3 cloves garlic, minced - 2 small tomatoes optional - ¼ cup water or stock - 2 large eggs, beaten - Salt and black pepper, to taste
🔪 Instructions
First is to prepare the bitter melon.Washed the ampalaya.Thinly sliced it and place it in a bowl.Sprinkle with salt and let sit for 10 minutes to draw out bitterness.Rinse thoroughly and drain well.
Sauté the onion, garlic tomatoes
Heat oil in a pan over medium heat.
Add onion and garlic and saute until it becomes soft.
Next is add the ampalaya to the pan and mix well.Pour in water or stock and simmer until the liquid is mostly gone and the ampalaya is tender but still crisp.
4. Add in the eggs push the ampalaya to one side of the pan.Slowly beaten eggs into the empty side and let them set slightly. Scrambled gently, then mix with the ampalaya.Seasoned with salt and pepper to taste.
5. It's done.Serve hot with rice.
This dish is perfect for a breakfast dinner or a nutritious lunch or you can have this for a light dinner.
