Just like the Lyrics from Ariana Grande's newest song “Twilight Zone”, I can’t believe I made this stupid mistake but it happened. When you think about coffee, you probably imagine a warming cup of coffee, inviting even. But honestly, there are ways to enjoy coffee that we might not be exposed to such as mouse, meringue, custard, cakes and crepes. I can name endless things that we can add coffee to and this was the base of me being a little experimental. The last time I was this experimental, the cake turned extremely bitter and since then, I gave up hope. Maybe I wasn’t meant to bake. And lately, screw that. I *can* bake. ## If you’ve seen me making food lately, I’ll let you in on a secret…. ## Usually, at night after I am shutting down my laptop for a good stretch, I go downstairs and start thinking about food. Not only do I have to feed myself but also my mom. So, I have to find a recipe that could work for both of us without being wasteful. Today though, as I went downstairs, I had these sachets of instant coffee powder from *Nescafe*. I don’t have any good use of them and I bought them at the time cause I was craving dalgona.So, I was trying to find more use of it than drinking it. I rarely drink instant coffee these days other than being a little experimental. That’s when my brain tells me that I can make *Coffee Mousse* or *Coffee Custard*. The thing is, I was lacking some ingredients to make custard and I was too lazy to go outside at like 11 PM just to get milk. ### The only thing I was able to make was this *Meringue.*  And I had this little idea to make meringue as a filling to Indonesian style Crepe. Indonesians call them Dadar Gulung which is supposed to be filled with grated coconut and palm sugar. However, in this recipe I was using coffee meringue to fill this crepe dessert. ## *Dadar Gulung*, Indonesian crepe but with coffee filling..... First I was making the crepe and adding pandan essence and coloring to the batter. So, it’s not something that’s really healthiest. Again, it’s late at night and usually after a good sleep, I could go to the market and perfect the recipe. It turns out just as you see below, surprisingly, it’s pretty delicious.  With only 2 sachets of nescafe original, I ended up with a huge bowl of coffee meringue. Honestly, I don’t know what else to make of it. So, I added flour, baking powder, baking soda and egg yolk then baked it for 25 minutes.  #### That came out looking like a brownie but it’s coffee cake that if you had too many could send you to another dimension. Since at the time, my uncle was still awake and he lives next door, I just had to ask him. He swears by coffee and told me that the cake is like a sponge cake with a dash of coffee flavor. I was shocked when he said it’s mild because actually when I taste it, it's pretty concentrated. I mean it’s nescafe but again, I probably had way too much coffee earlier so, a few bites of the cake got me a headache and made me feel pretty buzzed.  You can learn from my mistakes that if you deal with caffeinated ingredients, just wait until the sun comes up or you’ll send yourself straight into sleepless land.
