Happy day my dear friends, I hope you had a great day. Today I want to share with you one more recipe, of course delicious, and very easy to make. It's perfect for a good dinner or lunch. I'm talking about some delicious potato baskets with broccoli and tomato sauce. It's a wonderful combination of flavors. I love potatoes with red sauce, and broccoli gives it that special touch. I wanted to combine these three vegetables, which are some of my favorites, and I assure you it was a success. Let's start with the step-by-step instructions.

Ingredients:

3 potatoes.

3 tablespoons of plant-based milk.

1 tablespoon of vegetable butter.

2 tomatoes.

1 small head of broccoli.

1 teaspoon of instant yeast.

2 garlic cloves.

Salt and pepper to taste.

1/2 teaspoon of oregano, for the tomato sauce.

Vegetable oil.
Process:
1- Wash the potatoes and remove the skin, then chop them into chunks. Also wash and chop the broccoli. Cook the potatoes until tender. Cook the broccoli for just a few minutes to prevent it from becoming too soft.

2- After approximately 5 minutes, remove the broccoli from the water and set aside. When the potatoes are tender, remove them from the heat and prepare the mashed potatoes. I added butter, plant-based milk, and salt. When the mashed potatoes are ready, set them aside.

3- For the tomato sauce, chop the onion and tomato into small cubes, crush the garlic, and sauté the garlic and onion. Then, add the tomato, oregano, salt, pepper, and a touch of sugar. Cover and let it cook until the sauce forms.

4- Once the sauce is ready, let it sit for a few minutes, then prepare our potato nests in a greased cupcake pan. Add a little mashed potatoes. Using a glass, make a hole and fill with the tomato sauce. Finally, add a sprig or two of broccoli to each nest.

5- Bake for approximately 20 minutes, or until golden brown. Once the time is up, remove from the oven, let cool, and unmold. Enjoy this dish, which I assure you will be exquisite.
