Vegan Vanilla and Pastry Cream Cake

Ingredients for the cake:

1 1/4 cups milk or plant-based drink.

2 teaspoons white vinegar.

3/4 cup sugar, either white or brown.

100 ml vegetable oil; I used sunflower oil.

1 tablespoon vanilla.

2 cups sifted wheat flour.
-
2 teaspoons baking powder.
-
1/2 teaspoon baking soda.
- 1/2 teaspoon salt.
Ingredients for the vegan pastry cream:
-
500 ml of milk or plant-based milk.
-
100 g of sugar, or other sweetener.
-
75 g of cornstarch.
-
Vanilla to taste; I used a tablespoon.
-
50 g of plant-based butter.
Preparation:
1- First, let's prepare the pastry cream. Mix the milk, cornstarch, sugar, and vanilla in a saucepan and heat over medium heat for approximately 10 minutes, whisking constantly to prevent lumps from forming (I added a drop of yellow food coloring, but this is optional). Once the time is up, or when it's thickened, remove from heat and add the butter. Mix well, then cover with plastic wrap and refrigerate for approximately 1.5 hours.
2- To make the cake, in a bowl, mix the milk with the vinegar and whisk for a few seconds to combine both ingredients. Let it sit for 8 minutes. After this time, add the sugar, oil, and vanilla, and mix until the sugar is dissolved.
3- In another bowl, mix the flour, baking powder, salt, and baking soda. Then, add two parts to the previous mixture, stirring gently until smooth.
4- - Pour the mixture into a greased and floured cake pan and bake for approximately 40 minutes, or until golden brown.
5- Once the time is up, remove the cake from the oven and let it cool for approximately 15 minutes. Then, remove from the pan and decorate once it's completely cool.
6- When the cake is cold, and so is the pastry cream, we fill our cake. Before filling it, we beat the pastry cream a little, so its texture is more consistent and silky. Then we cut the cake in half, fill it, and cover it with the remaining pastry cream. You can decorate it with whatever you like. I added some peach slices. And that's it, enjoy this delicacy, perfect for any occasion.
