This dish is absolutely delicious, and satisfying. We've got leftover fried yellowfin from last night's dinner, so I'll repurpose it for today's recipe. Instead of just reheating it, let's make it even more delicious so it's not boring to eat. Below, you'll find the detailed instructions for making it.
Ingredients:
• 4 slices leftover fried yellowfin • 2 medium onions • 3 cloves garlic • 1-inch ginger • 1 medium tomato • 1/4 cup vinegar • 2 tbsp ketchup • 2 tbsp sugar • 1/2 cup water • salt and pepper to taste • cooking oil

Instructions:
I started by heating oil in a pan. Next, I added the chopped onions and garlic, sautéing them. Then I tossed the sliced tomato, letting it soften and blend into the mix.

After that, I poured ketchup, sugar, and some water.

I stirred everything together and let it simmer.

After that, I added the leftover yellowfin, coating each piece with the sauce.


I also seasoned it with salt and pepper. But when I tasted it, it had a strong fishy flavor. That's when I realized I forgot to add ginger and vinegar, so I added them right away. Then, I let the mixture simmer for another 2-3 minutes until the sauce thickened slightly. And that's it! You can now serve the Yellowfin Tuna Escabeche. Don't forget to eat it with hot steaming rice. ☺️
