It is a recipe for roasted pili nuts with a sweet, caramelized sugar coating. Pili nuts are sourced from the Bicol Region in the Philippines. That's why it remains a lesser-known snack globally compared to other nut varieties. However, because of their distinct flavor and impressive nutritional benefits, some foodies and health-conscious individuals sparked their interest in these nuts, which might lead to increased popularity in the future. So join me in the kitchen as I create this rich and satisfying dessert. Let's dive in! INGREDIENTS: pili nuts, sugar (white or brown), and oil (for roasting or frying the pili nuts before glazing) PREPARATION:
• My journey began with carefully washing the pili nuts, which had become a staple in my stock for quite some time. Next, I used my bolo to crack the shells. Taking care not to damage the delicate kernels, I positioned bamboo on either side of each shell to provide a protective cushion.
• After freeing all the kernels from their shells, I poured hot water over them to loosen and remove the brown skins, revealing the smooth, light-colored nuts underneath. This process prepared them perfectly for the next step in making my tasty glazed pili nuts.
• After preparing the pili nuts, I moved on to gathering the ingredients for the cooking process. I started by heating oil in the pan over medium heat, carefully adding the pili nuts to the hot oil, letting them cook evenly and absorb the flavors.
• Once the pili nuts were crispy and fragrant, I prepared to glaze them. I added sugar to the pan, watching as it started to melt and bubble. When it caramelizes or turns to a beautiful golden brown, I stirred constantly to ensure the sugar coated the nuts evenly and formed a delicious glaze. When perfectly coated and glossy, I spread them, let them cool and set, then they're ready to be enjoyed!
