The word Amandier means “almond tree” in French. Made with almond flour, eggs, butter and just a touch of citrus and finished with a bit of crunch from the sliced almonds on top, this French classic gets better with time.
We liked it even more when it was 3 days old. It's wonderful celebration of almonds, one of my favorite nuts!
Ingredients Zest of 1 orange ¾ cup (150g) sugar 5 large eggs, at room temperature 2½ cups (250g) almond flour ¼ tsp salt 5½ tbsp (80g) unsalted butter, melted and cooled ¼ cup (60g) crème fraiche (or Greek yogurt, skyr, or quark) 1 tsp (5ml) almond extract 1 oz. (30g) sliced almonds 1 tbsp icing sugar, for serving
Instructions Make an orange sugar: Rub together the sugar and orange zest with your fingers until the mixture is moist and fragrant. Mix the batter: Whisk the eggs and the orange sugar until they become foamy. Then, stir in the almond flour and salt. Add the melted butter and crème fraiche to the batter and mix until smooth. Stir in the almond extract. Pour the batter into a prepared 8-inch round springform pan (lined with parchment paper and lightly buttered). Smooth the top. Sprinkle the sliced almonds evenly over the top. Bake for 35–40 minutes at 350°F (180°C) until the top is golden and a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes before removing it from the springform. Cool completely before serving.
