Coconut macaroons are one of my favorite goodies to bake. These treat are not only super yummy, it also take just a few steps to make. Awesome, right?
The best things about these treats are the golden toasted exterior contrasting the soft and chewy burst of flavor once you have a bite.
First things first, I want to say that I am an 'internet-taught' cook. So this recipe is a result of comparing different recipes and tweaking it to fit my taste. :)

Ingredients:
2 cups of dessicated coconut
1/2 cup melted butter
2 large eggs, separate the egg yolk and egg white
1 teaspoon vanilla extract
1 can condensed milk
Pinch of salt

Equipment:
Cupcake liners (mini or normal size)
Oven
Electric mixer
Measuring spoons and cups

Easy steps:
■Pre-heat the oven to 160° celsius or 320° fahrenheit.
■Mix dessicated coconut, melted butter, egg yolks, vanilla extra and condensed milk. Blend until well combined.

■Beat eggs white and salt until stiff peaks form. I do this to make the macaroons more fluffy.
■Fold the egg whites into the coconut mixture until well combined.
■Scoop about 1-2 tablespoons of the mixture to the papercup liners on a baking tray. For fun, I would shape the macaroons to squares and circles. Make sure to space it 1 inch apart to allow each macaroon to cook.

■Bake the goodies for 25-35 minutes until golden brown. Oh, and rotate the baking tray after the 15 minute mark to allow even cooking. Let it cool for 5 minutes and enjoy! 😋
