These double chocolate oatmeal cookies are vegan, gluten-free, refined-sugar free, oil-free, filled with fibre and overall healthy for you. They require 4 simple ingredients and 25 minutes to make, including baking time.
The base of these are oats and bananas. I’m sure you are all very familiar with these two. You would be surprised if you knew in how many different ways oats can be used, they are literally the perfect choice for sweet treats. The second ingredient, bananas, is the only wet ingredient we are using in this recipe. By mashing them they create puree which perfectly coats and combines the dry ingredients later on.
Now, let’s be honest, just oats and bananas without anything else would taste pretty bland, am I right? That’s why there are two more ingredients that are going to define the flavour. I decided to make these my favourite flavour ever, chocolate. To create the rich chocolate flavour, we are using cacao powder and dark chocolate. You are most likely familiar with these two as well. Cacao powder has a bitter taste and that’s why you want to make sure the bananas you are using are very ripe and spotty for flavours to balance and create a sweet chocolate taste.
These cookies are the most perfect snack or desert you can ever wish for. If you are a fan of chocolate like I am myself, these are the perfect way to satisfy your cravings without going crazy. We all know how it is when cravings start kicking in – you need it fast otherwise you will end up eating a whole chocolate or two all by yourself at the end of the night.
Since these are pretty healthy you can also have them for breakfast if you are a fan of having something small to start the day off. I myself am more a fan of bigger, more substantial breakfast that keeps me full for a lot time and for these cookies to reach that I would probably have it eat all of them which is not really ideal so I just save these for snacking.
DOUBLE CHOCOLATE VEGAN OATMEAL COOKIES 🍪🍫

| INGREDIENTS
- 1 cup oats (use GF for gluten-free version)
- 2 ripe and spotty bananas
- ¼ cup cacao powder
- 30 g dark chocolate, chopped
| METHOD
1/ Preheat the oven to 180°C / 356°F.
2/ Peel the bananas and add to a large bowl. Mash with a fork until you get liquidy banana puree.
3/ Add oats, cacao powder and dark chocolate and mix with a spoon until dry ingredients combine with the wet and everything is well incorporated.
4/ Shape into cookies and place them on a baking tray lined with parchment paper.
5/ Bake for 15 minutes. Once baked, let them cool. Eat right away or store in an air-tight container for up to a week.
