la caña para producir el jugo que a través de un canal es transportado a un cuarto de fondos para su cocción, en esta área destacan los mazos que pueden ser colocadas en forma vertical o horizontal, su movimiento es dado mediante tracción animal, fuerza hidráulica o tracción mecánica con vapor o gas, el Trapiche de Clavo era hidráulico, destaca presencia de aun canal que provee el agua. fundación de Trujillo, con la fabricación de la panela, como producto, la misma aún pervive en Boconó, donde antiguos trapiches mantienen su producción en los arededores de la ciudad, el Trapiche de los Clavo actualmente es un museo, se convierte en testimonio antiguo de la creación de la panela en la región. llamar a los trapiches con el apellido de su propietario, su dueño Don Perpetuo Clavo nació en Boconó, desde muy joven se dedicó a la agricultura, con frecuencia vendía a los pueblerinos sus productos, el adquirió ese terreno donde construyó un Trapiche donde se procesaba la caña de azúcar, después de su muerte y años más tarde los terrenos fueron expropiados y convertidos en dicho Museo estructura o cuarto original, donde el pasado se realizaba la extracción del jugo de la caña de azúcar y unos grandes calderos donde se cocinaban sus mieles, y así obtener uno de sus derivados que es la panela, muchos de los implementos para cocinarla como las pailas se conservan dentro del museo. encontraba operativa, me llamó mucho la atención, una escultura de un anciano sosteniéndose de un palo o bastón que no sabría decirles a que hace referencia, saliendo de esta sala me encontré con el
