Hello my lovely foodies lovers how are you all doing this morning I made a sweet plantain frittata for breakfast which I want to share my recipe with you guys.once again welcome to my blog
The recipe is very simple and affordable and if you try this recipe you will love it.
My ingredients
2 ripped plantain
5 eggs
1 red bell pepper
1 green pepper
1 onion
7 tomatoes
2 cooking spoon of vegetable oil
1 teaspoon of thyme
1 teaspoon of salt
2 cube of seasoning
Preparation
I washed my plantain thoroughly and pill the back the I sliced it into smaller sizes
I started to prepare my veggies after slicing the plantain I washed my green pepper and red pepper and also remove the seed of the pepper before slicing the it.i also washed my tomatoes and onion and sliced it too
After slicing me veggies I add my half spoon of salt to the plantain and mix it very well then I set my frying pan on fire add add my oil and put onion then I added my plantain to the hot oil and fry it.
After frying the plantain I use my frying spoon to remove it from the hot oil
After frying my plantain I removed the hot oil from the frying pan and add just 2 teaspoons of vegetable oil then I added my onions,red pepper, green pepper, tomatoes then I added a cube of seasoning and my thyme and mixed very well and all for 2 minutes
I then washed my eggs then break it and put it inside a plate I added the remaining half spoon of salt I added another a cube of seasoning and mixed very well. Then I added my fried veggies inside the egg and mixed
Then I set my frying pan inside a low heat and add a spoon of vegetable oil that I used and fry plantain then I added my mixed egg inside my frying pan immediately I added my fried plantain onto of the mixed egg. after adding the plantain I added my remaining green pepper,red pepper and onion then I allowed it to fry.
And guys my plantain frittata is ready to serve
