Well I kinda did my Sunday Roast yesterday, as requested by my hungry lot.( Oh bother, dont know what to make today now)π.However, I made the scrumptious tender minted lamb joint.My husband loves it very well done, almost crispy on the edges.So I thought I would share with you my recipe for this amazing joint.
I have to thank my daddy for the lamb.He bought it from the butchers at a very good price, due to easter coming up.So he stocked up to feed a whole army including my hungry troops!
Ingredients 1 Lamb leg joint 1 Onion 2 Carrots 1 TBS Olive Oil 1 Garlic Bulb 2 TBS Mint sauce 50g Butter Softened 1 TBS Paprika 1 TBS Parsley 1 TBS Salt 1 TBS Brown Sugar Crushed Black pepper
Method
Step 1 Wash the lamb joint and insure you prepare the meat when it is at room temperature.
Step 2 Peel the onions and carrots.Chop the onions in quarters and chop the carrots in half.
Step 3 Line a tray with foil.Spray olive oil on the foil.Put the chopped onions and carrots in the tray with 25g cubed butter pieces and 4 cloves of garlic unpeeled.Place lamb on the tray.
Step 4 For the marinade take the remaining butter place in a bowl.Chop and peel 3 cloves of garlic.Add parsley, salt and sprinkle crushed black pepper.
Step 5 Now add the mint sauce and paprika.
Step 6 Now mix all the ingredients together in the bowl until it is a thick paste.On the joint make small incisions and add peeled garlic cloves inside.
Step 7 Now massage the mixture all over the lamb ensuring even coverage.Loosely Place foil over the lamb, so the marinade does not stick. Place in the oven Gas mark 4 / 180Β°C .
Step 8 I leave my lamb for 3 hours, middle shelf, as I like it very well done.Every half hour bast the lamb with the lamb juices.After 2 hours and 30mins, sprinkle brown sugar over the meat and mix it in the juices.This will ensure crispy shiny glaze.
Step 9 When the lamb is made to your preference.(I like mine very well done) take it out the oven to rest for 10 minutes.Ensure the foil covers it.Resting will make the lamb moist.Now your lamb will be ready to devour!!!! Mmmmmmm.Yummy!
