Tried yoga, transcendental meditation, conscious breathing, mindfulness– Nothing like knitting and cooking for me to restore my mental balance in autumn. To cope with existence having a hormonal maladie requires good food, and good food is, more usually than we think, easy and unexpensive to prepare. Like cabillaud en papillote, a dish I tasted in France last summer which I have translated through my sight and taste into this personal version.
For each serving we'll need a quarter of a small spring onion and three baby carrots cut en julienne. We put a long rectangular sheet of papier cuisson –baking paper– over an oven dish and the vegetables on it, salt slightly.
Besides, we´ll need 150 gr of fresh cod, six medium to small prawns, three green lemon thin slices. We salt and fresh grounded pepper the seafood.
Our cod go over the vegetables and the prawns around the cod, the green lemon slices go dancing on the top.
And then the primary superfood: extra virgin olive oil, two tablespoons, over our pretty whole. Preheat the oven at 200 ºC (390 ºF)!
We fold the baking paper to form a nice wrapping in the oven dish and put it into the preheated oven.
The papillote has to remain 13 minutes in the oven, then left two minutes out of the oven before opening the paper wrapping. Serve hot accompanied with corn salad with mustard-green lemon dressing and pair it with a cool glass of Chardonnay. Healthy omega-3 fatty acid and exquisite taste. Enjoy!
