Today, I have an easy and light recipe to recommend that's suitable for all ages. It's a clear soup with minced pork that I often make for my family. Each time, I like to rotate and use different vegetables. This time, I'm using enoki mushrooms, a very versatile vegetable that many people love for its unique texture.

Making this soup is very simple and not complicated at all. The Thai-style clear soup includes Thai aromatic herbs, which give the broth a wonderful fragrance and flavor. Here are the steps.
INGREDIENTS
- 1 cup minced pork
- Dried glass noodles, one handful.
- 1/2 cup enoki mushrooms
- 1 tbsp chopped carrot
- 4 cloves garlic
- 2 coriander
- 1 tsp black pepper
- 1 pork stock cube
- 1 tbsp fish sauce
- 2 tbsp light soy sauce
- tsp sugar
- 1 liter water
INSTRUCTIONS
- Soak the glass noodles in water until softened,for about 10 minutes. Drain thoroughly and cut into short lengths. Set aside.
- Trim off the woody end of the mushroom cluster. Rinse, squeeze out excess water, and pat dry. Set aside half of the cluster. Finely chop the other half into short pieces.
- Wash the coriander thoroughly and pat dry. Separate the roots from the leaves. Finely chop the leaves and set aside for garnish. Peel the garlic cloves.
- Make the aromatic base. Using a mortar and pestle, pound the coriander roots, garlic cloves, and black pepper until they form a fine paste.
Mix the pork balls
- In a mixing bowl, combine the minced pork, the pounded herb paste, light soy sauce, sugar, chopped carrots, and the chopped mushrooms.
- Mix everything together thoroughly until the mixture becomes sticky. Let it marinate for about 20 minutes.
Start the broth

Pour the water into a pot and bring to a boil over medium heat. Add the pork stock cube and stir to dissolve.

Once the broth is boiling, shape the marinated pork mixture into small balls and gently drop them into the pot.
- Once the pork balls float to the surface (indicating they are cooked), let them boil for another two minutes.

Add remaining enoki mushrooms to the pot, pushing them down into the broth. Cook for another two minutes.

Season the broth with fish sauce, light soy sauce, and sugar. Adjust to your taste.
- Taste the soup to ensure the seasoning is right. Add the chopped coriander leaves, give it a gentle stir, and wait for it to come to one final boil. Then, turn off the heat.
- Ladle the hot soup into bowls. Serve hot with steamed rice.
- The flavor is well balanced and savory. The minced pork, mixed with mushrooms, carrots, has a great texture, it's tasty, not too dense, and healthy. It's a simple homemade meal perfect for the whole family, especially for those wanting something light and easy on the stomach.
