Khanom Nga On (Soft Sticky Pumpkin Cake with Roasted White Sesame)

  • Do you like to eat pumpkin? We can use pumpkin to make so many dishes, both savory and sweet. Since I love eating pumpkin, I often buy some to keep at home when I go to the fresh market. Today, I used it to make a dessert.

  • There's a treat here called Khanom Nga On. The inside is a sticky, cooked coconut flour mixture, which is then coated in roasted sesame seeds. The result is a sweet snack with a soft, chewy texture and the crunch of roasted sesame.

  • Some recipes add different flavors, colors, or scents to the mixture to make it more appealing and varied. Today, I added pumpkin! The steps are simple, as follows.


Ingredients

  • 350g Pumpkin
  • 100g White Sugar
  • 300ml Coconut Milk
  • 150g Glutinous Rice Flour
  • A pinch of Salt
  • 150g White Sesame Seeds

Instructions

** Roast the Sesame Seeds**

  • Place the white sesame seeds in a pan over low heat. Stir constantly with a spatula until they are cooked, fragrant, and turn a light brown color. Set this roasted sesame aside.

  • Steam the pumpkin until cooked. It took me about 20 minutes.

  • Prepare a pan. Add the steamed pumpkin and mash it slightly with a spatula.


  • Add the white sugar and salt. Mix well; the heat from the pumpkin will help dissolve the sugar and salt.

  • Add the glutinous rice flour and mix until just combined. The mixture will be clumpy at this stage.

  • Pour in the coconut milk. Stir until there are no lumps of flour left, and you have a liquid mixture.

  • Place the pan on the stove over low heat. Stir constantly until the mixture becomes translucent, meaning the flour is cooked. It will come together into a mass and not stick to the pan. This took me about 10 minutes.

  • Immediately while it's still hot, pour the roasted sesame seeds over the mixture. Spread the seeds evenly all over. Shake the pan to ensure the bottom and top get coated with sesame.

  • Let it cool down completely.

  • Once the Khanom Nga On has cooled completely, cut it into your desired sizes. After cutting, press the cut sides into the roasted sesame seeds to prevent the pieces from sticking together and to your hands.

  • Arrange the Khanom Nga On on a plate, and it's ready to eat!

  • The flavor of Khanom Nga On is wonderfully chewy, soft, fragrant, and sweet. The roasted white sesame seeds are crunchy, aromatic, and nutty. Combined with the richness of the coconut milk and the sweet, fragrant flavor of the pumpkin, this sweet snack is absolutely delicious. It goes perfectly with a hot cup of tea.
