- Today, I have another shrimp dish to share with you. Since my family and I really love eating shrimp, I always try to create a variety of shrimp dishes. This time, I cooked it with herbs to add fragrance and complexity to the flavor. To also enhance the texture and make the shrimp crispier, I coated them in flour before frying. This makes the dish even more delicious. I've named it Stir-fried Shrimp with Lemongrass. (กุ้งผัดตะไคร้)
- Stir-fried Shrimps with Lemongrass is the perfect harmony of crispy, fragrant, spicy, salty, and sweet all in one bite. It's a combination of flavors and textures so perfectly balanced that it can be called a "Thai signature dish" that captivates anyone who tries it.
Ingredients
- 300 grams of fresh shrimps
- Crispy frying flour (for coating the Shrimps)
- 5 red Jin Da chilies (coarsely chopped)
- 5 cloves garlic (coarsely chopped)
- 1 stalk lemongrass (thinly sliced)
- 5 kaffir lime leaves (torn, central stem removed)
- 1 tablespoon oyster sauce
- 1 tablespoon fish sauce
- 1 tablespoon granulated sugar
- 1 teaspoon seasoning powder
- 1/2 teaspoon ground white pepper
- Vegetable oil (for frying and stir-frying)
Instructions
Preparing the Shrimp and Herbs
- Shrimp : Wash with water mixed with a little salt. Then, peel them, leaving the tail section intact. Remove the digestive tract (the black vein). Wash them clean once more and set aside to drain.
- Lemongrass: Wash thoroughly, pat dry, and slice thinly.
- Garlic:Peel, wash, pat dry, and chop coarsely.
- Red Jin Da chilies chilies:Wash, pat dry, and chop coarsely.
- Kaffir lime leaves:Wash, pat dry, and remove the center stem by tearing it out.
Next Step
- Lightly coat the Shrimps with the crispy frying flour.
- Fry in hot oil until golden and crispy. Remove and drain on a wire rack or a paper towel to remove excess oil.
- Place a pan over medium heat. Add a small amount of oil. Add the chopped garlic and red chilies. Stir-fry until fragrant.
- Add the oyster sauce, fish sauce, sugar, seasoning powder, and ground white pepper. Stir-fry until everything is well combined.
- Add the sliced lemongrass and kaffir lime leaves, followed by the fried Shrimps. Gently toss everything together until evenly coated.
- Turn off the heat. Transfer to a serving plate. Serve hot with steamed rice.
- The crispiness of the shrimp, fried to a beautiful golden brown, is enveloped in a thin layer of batter. Each bite delivers an audible crunch, while the inside remains juicy and full of the natural sweetness of fresh shrimp.
- The flavor of the sauce and spices is outstanding, with a rich and aromatic fragrance from the garlic and red chilies stir-fried in oil until fragrant. This is followed by a mild saltiness from fish sauce and oyster sauce, balanced with a subtle hint of sweetness from sugar, ensuring the taste is not overly harsh.
- For me, the standout feature that sets this dish apart is the uniquely refreshing aroma from the sliced lemongrass and kaffir lime leaves, accompanied by a mild spiciness from red chilies. This gives the overall flavor a refreshing quality, making it feel light and not overly rich.
