  • I really love eating purple sweet potatoes because of their aroma, taste, and great texture. They’re easy to eat and can be used in both savory and sweet dishes. They’re also easy to find here, inexpensive, and keep for a long time. I had one purple sweet potato left in my kitchen, so today I decided to use it to make a simple French toast, using just a few ingredients I already had on hand.

  • Here’s the recipe and steps for the French toast I made, using purple sweet potato as the filling. When I first came up with this idea, I could already imagine its taste and texture and when it was done, it turned out even more delicious than I expected. Ingredients


  • 100 grams of purple sweet potato, cut into pieces
  • 50 grams of fresh milk
  • 1 tablespoon of  granulated sugar
  • 3 slices of bread
  • 1 egg
  • 1 tablespoon fresh butter

Instructions


  • Steam the purple sweet potato pieces until soft and tender. Make sure the water is at a rolling boil throughout the steaming process. It took me about 20 minutes.

  • Once the purple sweet potato is cooked, mash it while it's still hot until you have a smooth, fine paste.

  • Add the granulated sugar and mix until the sugar dissolves from the residual heat of the purple sweet potato.

  • Add the fresh milk and mix until combined and you have a smooth, creamy purple sweet potato paste.

  • You can adjust the amount of milk or sugar to your liking, but be careful not to make the mixture too runny.

  • Prepare the bread. If your bread has crusts, you can cut them off (if you don't like them).

  • Spread the prepared purple sweet potato cream onto 2 slices of bread, covering them evenly.

  • Take the remaining slice of bread and use it to sandwich the two cream-covered slices together.

  • Cut the sandwich into pieces of your desired size. I cut mine into bite-sized pieces, which yielded 6 pieces.

  • Prepare a mixing bowl. Crack the egg into it and beat it well.

  • Dip each piece of the prepared sandwich into the beaten egg, coating it completely on all sides.

  • Heat a pan over medium-low heat and add the butter. Once the butter has melted, pan-fry the egg-coated bread pieces until golden brown and cooked on all sides.

  • Arrange on a plate and serve.The exterior of the French toast offers a satisfying crispness, thanks to the egg-coated bread fried in butter until golden brown. When you take a bite, you’ll discover a warm, creamy purple sweet potato filling inside.
