I surprised my mum with this raw blueberry cheese cake for Mother's day and she was totally stoked ๐
It is actually very easy to make. I was just improvising without using an exact recipe, and it turned out to be mind-blowingly delicious ๐
The best thing about raw cakes is that you can't fail... Really... If the texturen color or taste isn't 100% the best, you can always add a little bit of this and that, and it's gonna turn out to be perfect according tonyour taste. Baking something in the oven is much more difficult, because if you don't follow a recipe 100%, you can fail easily.
Let me sharw my improvised recipe with you.
Base:
Ingredients:
- 4 handful of dates
- 2 cups oat flour
- 1 cup sunflower seeds
- 1/2 cup desiccated coconut
Place all the ingredients in a food processor and blend until it becomes crumbly and sticky. Pour it in a cake form (I used 22cm diameter) and press it down with your hands.
Cheese cake filling:
- 4 cups cashews (soaked and rinsed)
- 1 can of full fat coconut cream
- 3/4 cup agave syrup
- 4 cups raw blueberries (frozen are fine, too, just let them defrost)
- 2 tbsp lemon juice
Plave everything in a food processor or high speed blender and blend until very smooth and creamy. Pour it over the base and put it in the fridge.
I let it sit overnight and the texture was perfect the next morning. I topped it with fresh blueberries and eldelflower.
My little niece was quite impatient while I was taking pictures of the cake ๐ She couldn't wait to finally taste it...
