Mango Stew is a delightful dish that perfectly combines the natural sweetness of ripe or semi-ripe mangoes with the warmth of aromatic spices. In this traditional-style recipe, the rich and creamy base absorbs the mellow tang of the mangoes, creating a comforting and fragrant blend that is both unique and satisfying. It beautifully represents the balance of sweetness and savoriness that defines Sri Lankan home cooking. This was a new attempt for me — and it turned out absolutely delicious!

2 Semi-ripe mangoes. 10 Small Onion Clean and wash). About 7-8 green chilies, cut in half A little bit of turmeric and curry powder. 1 Teaspoon of finely crushed ginger garlic paste. 2 Teaspoon of chili powder. 2 Teaspoon of Pepper powder. 1 Teaspoon of Sugar. A little salt water. 3 Tablespoon of vinegar. Coconut oil for frying.

The cooking process as follows.
Now let’s get ready to prepare it! First, peel the mangoes and cut them into medium-sized pieces as shown below. Then, wash the mango pieces thoroughly in salted water to remove any stickiness and enhance the flavor.
Next, take a pan and add some coconut oil. Place it on the stove and let the oil heat well. Once the oil is hot, add the mango pieces and fry them until they turn a lovely golden color.
Now place a clay pot on the stove and add a little vinegar. When it starts to heat up, add the mixture of crushed garlic and ginger, along with a small piece of onion, curry leaves, rampe, and green chilies. Then stir well to combine all the flavors.
Next, add chili powder, black pepper powder, a little salt, and sugar to the mixture. Stir well so that all the spices blend evenly, releasing their rich aroma and flavor.
Finally, add the fried mango pieces to the mixture and stir well until they are fully coated with the spices. Let it cook for about 2–3 minutes, allowing the flavors to blend beautifully, then remove it from the stove.
