Unlike the usual Kevum made using moulds (Achchu Kevum), this variation is shaped by hand using a spoon, giving it a unique form and an extra crispy texture. Made from ingredients like rice flour or wheat flour, treacle, and coconut milk, Handi Kevum carries the authentic aroma and rich sweetness of village-style festive treats. It’s a perfect addition to tea time or celebratory tables, especially during the Sinhala and Tamil New Year or family gatherings.

Materials Used.

1 Cup of wheat flour . 100g finely chopped jaggery 1/2 Cup of Water. Coconut oil for frying. 1/2 Teaspoon o Baking soda. A pinch of salt. 1 Cardamom pod.

The cooking process as follows.

No> w let’s get ready to prepare it. First, add some jaggery to a pan and pour in about half a cup of water. Mix well until the jaggery dissolves completely in the water. Then place the pan on the stove and keep stirring continuously as it heats, allowing the jaggery mixture to blend smoothly and thicken slightly.

Next, I added a crushed Cardamom to it. I continued mixing it.

Now, I added the wheat flour into a bowl. Then, I poured in the prepared jaggery syrup and mixed it well until it formed a smooth batter with a nice aroma and perfect consistency for frying. WhatsApp Image 2025-10-31 at 16.23.52.jpeg

Now, take a pan and pour in some coconut oil, then place it on the stove to heat.Once the oil is well heated, use a medum spoon to carefully pour portions of the batter into the hot oil, shaping them as desired.Fry the Handi Kavum until they turn a golden brown color, giving off a rich aroma and crisp texture.
