When it comes to quick and flavorful stir-fries, water spinach (Kangkong) holds a special place in Sri Lankan kitchens. Its tender leaves and hollow stems beautifully absorb spices, making it a perfect ingredient for a flavorful and vibrant devilled dish. Not only is it tasty, but it's also highly nutritious — ideal for children, adults, and especially expectant mothers. Today, we’re going to transform this humble green into an eye-catching dish using chilies, onions, garlic, and tomatoes. So let’s take a look at how to prepare it, step by step.

Materials Used.

Water spinach 300g. 2 onions, cut into rounds. A tomato cut into squares. Curry leaves. Two green chilies, halved. 4 cloves of garlic, finely chopped. Coconut oil for frying. 2 cardamom pods. 1 Teaspoon of crushed chili powder. 2 cloves. A small piece of ginger. A piece of cinnamon. 1/2 Teaspoon of Pepper powder. 1/2 Teaspoon of turmeric powder. 1/4 Teaspoon of Cumin Seeds.

The cooking process as follows.

First, wash the young Water spinach (water spinach) thoroughly and break it into large pieces. Untitled-1.jpg

Now, using a wooden mortar and pestle, grind lemongrass, curry leaves, cinnamon, dried chilies, and ginger well. Untitled-1.jpg

Next, place a pan on the stove and add about two tablespoons of coconut oil. Once heated, add the chopped garlic and let it sauté. Then, add the green chilies and curry leaves, and allow them to sauté as well. Untitled-1.jpg

Now, add the ground spices from the mortar and pestle, along with chili powder, turmeric powder, black pepper powder, and a pinch of salt. Mix everything well. Then, add the water spinach and combine it thoroughly with the spice mixture. Untitled-1.jpg

Now mix everything well, and once it starts to wilt slightly, add the sliced onions and chopped tomatoes. After about a minute, remove it from the heat. Untitled-1.jpg
