Celebrations become even more special when they are paired with unique flavors and creativity. For the 4th birthday celebration, I decided to prepare something extraordinary — a Peanut and Winter Melon Dosi Mix Coffee Cake. This combination brings together the nutty richness of peanuts, the soft sweetness of winter melon dosi, and the deep aroma of coffee, creating a cake that’s both memorable and meaningful for such a milestone.
Materials Used.
2 Teaspoons of instant coffee powder 3 Teaspoons of crushed jaggery. Crushed peanuts 30g. 30g of winter melon cut into small pieces. Coconut oil 130ml. Sugar 130g. Coconut milk 125ml. Wheat Flour 200g. 1 Teaspoons of yeast. Powder of 2 crushed cardamom pods.
The cooking process as follows.
First, take a bowl and add coconut oil and sugar, then mix well. Next, add a little coconut milk to it and combine thoroughly. After that, add wheat flour, yeast, and baking powder, and beat the mixture well.
Next, take another bowl and add grated jaggery, coffee powder, 2 tablespoons of wheat flour, 3 ½ tablespoons of coconut oil, ground cashew nuts, and a few pieces of winter melon candy. Mix everything well and set this mixture aside.
Now take a baking tray (or dish) and line it with parchment paper. First, pour in the initial mixture you prepared. Then, add the second mixture on top of it and arrange it as shown below.
Now place the prepared mixture into a rice cooker and steam it for about 40 minutes.
Finally, once it is ready, cut it into pieces and serve.

By blending traditional flavors with a modern twist, it turns into the perfect centerpiece to honor this celebration.
