Now a days I am trying to avoid Chapati in my dinner. Its not about my laziness😆 but trying to become little bit Health consious. So thats why decide to eat light food at dinner.
You eat anything but beat digestion food is Khichadi. In my home if one is ill then full family will have khichadi in their plate🤣. Children never love khichadi but trust me this food is wholesome. You won't need anything after that.
Today I am making Mix Vegetable Khichadi for my dinner with lots of colourful vegetables in it. Khicahdi is healthy and very light dish and good for the digestive system too. In this dish we can put Ghee(clarified butter), cuminseeds, Asofedita, curry leaves and ginger for the taste and aroma along with the vegetbales. But if any people are suffering from stomach upset and diarrhea then this is the comfort meal for them. If you want to avoid the vegetables then you can and can have this dish in a simple way. So here we goes-
Ingredients
💫rice-1cup 💫moongdal-1cup 💫Ghee-2tbspn 💫carrot-½cup 💫beans-½cup 💫capsicum-⅓cup 💫greenchili-2 💫curry leaves-6 💫ginger-⅓tbspn 💫potato-2 💫coriander leaves 🍃-½cup 💫asofedita-½tspn 💫water- 4 glass 💫cuminseeds-½tspn 💫Turmeric powder-½tspn 💫Salt- according to the taste
Method
1.Soak dal and rice in a bowl for ½ an hour.
2.Chop the veggies like carrot, beans, capsicum, potato, broccoli, cauliflower, peas etc.
3.Now heat ghee in a pressre cooker. Then add cuminseeds, curry leaves , greenchili, asofedita and then Potato. Mix it.
4.further add coriander leaves.
5.then add all the chopped veggies.
6.add turmeric powder, salt and mix it properly.
This is all the spices i used to mke this dish. If you want then add redchili powder its optional for spiciness.
7.further add washed and soaked dal and rice.
8.Mix it properly.
- Further add water.
10.stir it. Add salt if needed.
11 cover and cook it for 30 to 45 mins. Or you can put 3 to 4 whistles.
Then open and stir.
The hot khichadi is Ready to eat..
Add chopped corriander leaves 🍃 and serve it in a plate with a dallop of ghee and mango pickle by side.
