Let's go crazy and cook a no-bake vanilla cheesecake recipe with simple ingredients! We will need cheese... biscuits... Bitcoin above $100k ... and gwei on Ethereum mainnet at the lowest value. The taste is given by the green candles!
What we need for the base? One cup and a half on graham cracker crumbs or digestive biscuits. I usually put a whole pack to make it simple! Then we gonna mix the crumbs with a quarter of a cup of granulated sugar and half cap of melted unsalted butter.
The filling is more important, and you can add or remove some of the ingredients. It's a must to fit your desire, so feel free to add other flavours and fruity bits. Here is what I used for my New York style vanilla cheesecake:
- 16 oz (450g) cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon of vanilla extract
- 1 tablespoon of lemon juice
- 1 pack of double cream
- 1 tablespoon powdered sugar
So here’s how I make my go-to no-bake cheesecake! Super simple... but always a hit. I start with the crust, mixing the crumbs with sugar and melted butter. I stir that together until the texture feels like wet sand, then press it firmly into the bottom of a springform pan.
I use the bottom of a glass to pack it down evenly. Once it’s nice and tight, I pop the pan into the fridge to chill while I work on the filling. However, if you want the base more crumbly... don't press it too hard and leave the layer ticker! Sorry ... what's the ticker? Still $ETH?
For the filling, I beat a couple blocks of full-fat cream cheese until it’s really smooth. This time I used three packs of Mascarpone, more than it was needed! I added sugar, a teaspoon of vanilla extract, and a splash of fresh lemon juice. Mixed all of that together until it’s creamy and well combined.
In a separate bowl, I whip a cup of heavy cream with about a quarter cup of powdered sugar until it forms stiff peaks. You want it nice and fluffy. Then I gently fold the whipped cream into the cream cheese mixture, going slow and make sure it’s all blended but still light and airy.
Once that’s done, I take the crust out of the fridge and pour the filling right over it. I smooth the top with a spatula and give the pan a little tap on the counter to get rid of any air bubbles. Then it goes back into the fridge, for at least six hours. Overnight is best if you can wait!
When it’s ready, I take it out of the springform pan and serve it just as it is, or sometimes I’ll dress it up with fresh berries or a drizzle of chocolate or fruit sauce if I’m feeling fancy. LFG anon!
