Last weekend, my husband and I finally decided to give in a little craving that I have after hearing so much buzz about it from my friends although this is nothing really new. I could be curious or just simply bored from the usual that I see around me. Wait no more I said to myself this is the time to try a Vietnamese coffee. The kind that makes you wait while it slowly drips into your cup. Am I here for the novelty or what? well it is for the bonding time too with my other half who I miss so much as he only goes home every weekend.

So off we went to Marquee Mall in Pampanga, and we found Doidep, a Vietnamese resto that promised just that. I love how the stores and restaurants are spread throughout the place and interspersed with greens.

When they served the coffee on our table, it didn’t look like the usual. Instead of espresso shots from the machine, there was this little golden contraption sitting right on top of the cup. A phin, I think that is what they call it. It was nothing fancy just simple little tin, but somehow felt ceremonial to me. Am I convincing myself that or do I really feel like the coffee was being handcrafted just for me drop by drop. Well you be the judge.

I went for the classic with condensed milk, and when the last drop fell, I gave it a stir. It was a little sweet, creamy, but still carrying that punch of real coffee. My husband chose the black and strong version with no frills. We shared sips, of course, because how could we not? Wait am I the only one hyped? yes and that is what I love about my hubby he supports me all the way. I am so thankful for that and no new coffee experience would top that.

And it wasn’t just coffee we ordered Vietnamese food too. Flavorful, and rich and also filling. I think I love the food more than the coffee I craved for. Judging from the two dishes above Vietnamese cuisine is a good balance of herbs against richness, savory against sweet. There is the taste of ginger and lemon grass I noticed and what a seemingly humble looking dish really tasted this good.

It is not just the drip of coffee that makes the experience special. The ritual may look simple but what made it unforgettable was sitting there with my husband, sharing the sips, the conversation we never had and making memories together. He never complains about these little whims of mine like trying a new dish, or chasing a craving. Instead, he is right there beside me enjoying the moment. In the end, the coffee experience wasn’t just about patience it was about partnership. And that’s what made every drop matter.
