Ingredients:
1 cup raw rice
1/2 cup water (for soaking)
1 cup grated jaggery or brown sugar
1/2 cup grated coconut (fresh or desiccated)
A pinch of salt
Instructions:
Wash the raw rice thoroughly and drain the water
Spread the rice on a clean cloth or paper towel and let it dry for about 30 minutes.
Once the rice has dried, in a sauce pan fry over low heat becoming goldenbrown color.
Grind it in a blender or food processor until it becomes a fine powder. Set aside.
Add the grated jaggery or brown sugar, grated coconut, and a pinch of salt. Mix it well.
Next add the ground rice powder to mixture and sprinkle a little water.
Grease your hands with a little oil and shape the mixture into small balls or oval-shaped portions. Press them firmly to ensure they hold their shape.
Rice Aggala can be enjoyed as a sweet snack with a cup of tea or coffee.
