Air cakes
Flour - 230 g sugar - 150 g kefir - 130 ml butter - 100 g eggs - 2 pcs. baking powder - 10 g vanilla sugar - 1 tsp. salt - a small fraction raisins (optional) - 100 g zest of a small lemon (optional) Beat the eggs with sugar, vanilla sugar and salt. Add melted butter (not hot), kefir, raisins and lemon zest. Mix everything well. In a separate bowl, mix flour with baking powder and sift into the egg-kefir-butter mixture. Mix well. Next, add the eggs one by one and beat the mass for a minute after each one. Sift the flour, cocoa and baking powder into a separate container. Combine the dry and liquid ingredients and knead the dough until smooth. We spread the dough into molds (the amount of dough is calculated for about 12-14 small cupcakes). Bake the cupcakes in an oven heated to 180°C for about 20 minutes.c
