Dodgey apple and crumble-muffin-tart thing recipe

I attempted to make classic apple pies last week, and it all went a bit wrong. Rather than my intended pies, I gota little frustrated with the pastry and ended up a sort of butter/ flour crumble on which I dumped some apple, and a little strawberry jam for good measure!

I think the problem started with the fact that I was using old crumble mix from two days earlier - YE S from one previous mistake, I managed to construct somehow another mistake.

I actually make a really nice crumble also earlier last week, with my SECOND crumble mix, on the first attempt I'd used a food processer and it quickly turned into, well, pastry.... thankfully being middle class we had sufficient butter/ flour etc. to knock up a second batch, which was MORE luxurious, but actually that first mix was basic, literally just butter and flour, so I thought 'ah pastry for another time'.

Post-crumble and two days on I let the refrigerated pastry hit room temperatur and went to roll it out, intended to cut out little pastry rounds for the bottoms and tops of my soon to be constructed appple pies.

The pastry, however, was having NONE OF IT... It wasn't pliant enough it didn't roll out, at least not thin enough to do eight pies which is the minimum I was aiming for....

The solution...

Simples - Just dump to flakey pastry mixture into the tins and top with the chopped apples and jams I had lying around....

  • Two day old crumble mix, overchurned into pastry.
  • Apples
  • Jam

Infinite Baking mistake negative feedback loop averted (the result)

It turns out that the end result was tasty enough, I mean you can only go so wrong with butter at the end of the day, and this was very nice served with a little ice cream.
