Family Lunch and a Healthy Recipe: My Tasty Mung Bean Soup with Chicken and Bitter Gourd Leaves

To be honest I prefer this than any other green leaves for the sauteed monggo coz I like its bitter taste. I actually like mung bean soup with bitter gourd in it, i'm curious though if my fellow Filipino hivers here already tried sauteed monggo with bitter gourd in it. Have you? Anyways, yesterday, I was in the garage then when mama called me using her very loud voice. Lol. I saw her coming from the backyard, near the river. I saw her with green leaves in her hand with a knife on the other one. She harvested some green leafy veggies again near the river, as I see it.

Here's the said green leafy vegetables. She already pluck them out on its stem, one by one. That's the reason why the greens a lil bit crumpled and dry. And that long thing there is a green long chili. I soaked the greens for a bit salt water.

And here's the needed ingredients for today's recipe. **200 grams of monggo, 400 grams of chicken, garlic, onion, chicken cubes, salt, water, green chili, bitter gourd leaves and tomatoes.** I didn't show it on the photo but I put just one.

First thing I did here was boil the mung beans. Boil it until the beans go POP and the skin was peeled off to its flesh. The oldies doesn't really want the mung beans skin on their sauteed monggo. So yeah, that's why I separated them. I can't completely remove the skin but I think I was able to remove 90% of its skin.

It's time to sautee the whole thing. I started with the chicken. Ahhhh, by the way, I marinated the chicken with salt and pepper. Once the chicken meat turns a lil brown, I added the onion, garlic and tomato next.

I just mix them altogether, I added a little water as well. Once the chicken tenderize, I move it to where I boiled the mung beans. Yes, mixing them together again. I cooked it for another five minutes then I added the greens, that okra that Mama asked me to mix in it and the chili.

And it's done! And this time, it is more of a complete version unlike the recipe of this that I shared before. I didn't even put tomato in those version but this one has it. Seriously, sauteed mung beans is more delicious with tomatoes in it

Tadaaaan! I enjoyed it with the oldies. Seeing how they eat their lunch, I say, they really like it too. Next time I should make another but with pork this time. Pork taste really good with this too.
