This long green eggplant is a somewhat rare vegetable where I live, unlike purple eggplant, which is abundant in the markets where I live. I got bored of eating purple eggplant every day, and coincidentally, my mother went to my relative's house in the mountains, where they sell a lot of green eggplant. My mother bought a little, not too much. When I got home, she asked me to prepare this long green eggplant because she wanted to enjoy my cooking for lunch today.

Okay, my dear mother, I'm going to prepare this green eggplant with dried shrimp sautéed with shrimp paste. I know you really like shrimp paste, especially dried shrimp. She loves it too. So I combined these three ingredients to create a spectacular side dish for lunch today. Although simple, I still call it a spectacular side dish, hehe.
Because I believe that even simple dishes like eggplant and dried shrimp can be delicious, because enjoying delicious food doesn't have to be expensive, right?

Meanwhile, shrimp paste itself is made from shrimp mixed with other spices, shrimp paste adds a fragrant taste and smell to our dishes, especially if it is made into shrimp paste chili sauce, shrimp paste is a very spectacular dish in my area, almost all dishes can be added with shrimp paste to add deliciousness to each of our dishes.

First, I prepared the shrimp paste, then I washed it until clean, and I also started to cut the eggplant into small pieces.

I just ate it with my hands, so it tastes better, usually when eating with shrimp paste side dishes like this, it's best to eat it with your hands so it tastes better, it tastes really good, the rebon shrimp is really delicious along with the green eggplant with the right level of doneness in my opinion, the aroma of the shrimp paste is very fragrant makes me want to add more rice hihihi
