Eggplant vegetables with various colors and of course all eggplant color variants are definitely good if we consume them within reasonable limits, such as this large round green eggplant, I usually consume it as a side dish for my lunch every day, besides purple eggplant, this green eggplant is also very delicious if used as a side dish, it can be fried, boiled, made into curry sauce or in balado chili sauce, and today I will process this green eggplant into our favorite balado eggplant.

This vegetable is very suitable if cooked like this, and it is also okay if it is served with chili paste, but this time, I did not use chili paste, just using ordinary chili sauce like this is very delicious, very suitable to be eaten with warm rice and salted fish side dishes, you can imagine how delicious it is when you eat this food with very fresh ice water hehe

First, I cut the eggplant into small pieces, then I washed it again until it was clean and soaked it for 5 minutes in salt water, so that the worms would die if there were any worms, then I fried it until it was half cooked, until the eggplant was just wilted.
