Hello Hivers of this community! Last Wednesday was a day to celebrate because it’s my mom’s birthday who works overseas.
Even though she was far away from us, we didn’t forget to cooked her favorite food which is “pancit bihon”. I believe that in every Filipino birthday occasion, pancit was never absent because if you cooked it on your birthday, it will prolong your life, well that’s what elderly says about it, haha.
Anyway, we thank God for another year He had given to my hardworking mother, her sacrifice to work overseas was priceless and I’m always proud of her. She deserves more than this “pancit”. She was planning to go home next year and my siblings and I are also planning to surprise her with a gift like a vacation to thank her for everything she had done for us.
At Lunch, since I don’t have any companion that day to prepare for our foods, I just bought a home-cooked lunch like grilled fish, sauteed vegetables and pork dish. These foods are also her favorite, good thing there is a nearby restaurant at our place who cooks dishes that was really delicious and at the same time affordable.
I cooked a very easy and simple recipe of “pancit” or noodle recipe which is “pancit bihon”. The ingredients are 1 kilo “pancit bihon” and 1 pack “canton”, soy sauce, ½ kilo of chicken, fish balls, chicken cube, pepper, oyster sauce, onion, and garlic. Carrots and cabbage for the vegetables.
I first boil the chicken until it is tender, then set aside the chicken broth because I will use as a water for the pancit.
I fry the fish balls first in a pan then set aside for a while.
Sauté the onions and garlic until it becomes aromatic then add the shredded chicken and add some pepper. Cook until the chicken is slightly brown then I added the carrots cut into strips, mix and cook until the carrots are a little bit soft then I added the cabbage and about 2 tbsp. of oyster sauce. I also added the fried fish balls. When the cabbage was half-cooked. Set aside the sauteed chicken with carrots and cabbage.
In the same pan I added the chicken broth and added 3 cups of water.
When it was already boiling, I added about half cup of soy sauce, chicken cubes, 5 tbsp. of oyster sauce, 1 tsp. pepper, I also added a tsp. of salt then I tasted it before adding the pancit and I was satisfied.
I added the “pancit bihon and canton”. Then cover the pan for about 2 minutes, when the pancit was already cooked I added the sauteed chicken and vegetables and set the fire into low heat. Mix until all the ingredients are well combined.
Then we have it my very own “pancit bihon” for my mom’s birthday.
Meanwhile, my brothers also bought some doughnuts, but my older brother said that he will be cooking early dinner on Saturday for a post birthday party for my mother.
Even though our mother was far away from, it feels like she was just nearby because everyday we tend to have a video call. I really miss my mom, hopefully next year she is with us so that we could celebrate her birthday together.
