Recipe for a Sweet Delicacy called “Palitaw” with Yema Filling Drench in Desiccated Coconut

Good day Foodies. I’m here again with another easy and simple food recipe that would be perfect for your snack together with your family.

“Palitaw” is an Ilocano dialect here in the Philippines which means to float. This sweet delicacy was cooked using water and when it floats it means that it was already cooked. This delicacy only requires you to use few ingredients but the recipe I will share to you is with a twist because I will add some sweet filling on it making it more delicious. So, join me in my humble kitchen and let’s cooked this sweet delicacy.

Ingredients:

  • ½ kg. Glutinous rice flour
  • Desiccated coconut
  • Sugar
  • 1 egg yolk
  • Small can condensed milk

Preparation:

In a bowl mix the glutinous flour with water. Add the water gradually until the consistency of the flour becomes clay like. Then set aside.

In cooking the yema filling, we need a small can of condensed and a pc. of egg yolk, mix first before putting on the fire. Cook it in low set of fire. Then set aside and let it cool until the yema filling becomes thick.

When the yema filling already cooled down we can now start the process. Get some of the mixture of glutinous rice flour, flatten it and put some yema enough to fill the rice flour dough. I made a total of fifteen pieces with different sizes because it’s a trial and error. This is my first time cooking “palitaw:” with yema fillings. When I put the filling, it tends to burst so what I did is flatten the rice flour then put some filling and add another flatten rice flour and carefully seal the sides so that the filling wouldn’t burst from the inside.

Repeat the process.

Cooking time:

In a casserole add about 2 liters of water. When the water is boiling, you can now put the “palitaw” but don’t overcrowd it on the casserole, wait until it floats then remove it on the casserole.

Let it cool before drenching it to the desiccated coconut with sugar. I only add about 1 tbsp. of sugar because the yema filling was already sweet, it might overpower the sweetness of the “palitaw”. Coating it with some banana leaves for a better presentation of this sweet delicacy.

Then we have it a very easy and simple sweet delicacy from our province. “Palitaw” with yema filling. Your kids would surely love this also adults like me 😊. The taste was really addicting that I want to eat after another but I’m already full just by eating 2 pcs. of it.
