Hello again my dear friends of this community, I’m happy to share with you how I cooked one of my comfort foods for today’s dinner. I believe each one of us had a comfort food that even if it was serve repeatedly, we will be happy to eat it.
Chicken curry was one of my comfort foods because it reminds me of my mom who works overseas, her chicken curry was really one of the best dishes she cooks especially when it’s Christmas time. So, today I’m gonna show you how I cooked this delicious recipe of chicken meat.
Ingredients:

½ kg. chicken meat

200 ml coconut milk

2 tbsp. curry powder
-
1 tsp. salt
-
2 tsp. pepper
-
Seasoning granules
-
Laurel leaves
-
Ginger
-
1 clove garlic
Cooking time:
In a pan sauté first, the garlic then ginger until it becomes aromatic add the chicken meat, I already added the pepper also, then cooked until the chickens are slightly golden brown. I added the curry powder and pan fry for about 2 minutes or until the curry powder is fully absorbed by the chicken meat. Then I added ½ cup of water, cover and let it simmer. When the water is already reduced add the coconut milk, then add the seasoning granules and the salt. I also added ½ cup water then the laurel leaves. I stir it then cover and cooked more until the sauce is slightly reduced.
Then after about 20 minutes of cooking this recipe, we can now have my simple version of chicken curry with coconut milk. I was happy to eat this comforting food for today’s dinner, my son was also happy to eat this food, it was also his favorite; you can add also potatoes and carrots for this recipe and red bell pepper if you want it a little bit spicy.
