Hello again Hive Food community. I’m here again with another easy recipe that your family and kids would surely like.
Almost every day we cooked eggplants for breakfast; we had so many eggplants harvested fresh from our garden. So, today I thought of a recipe that has an eggplant on it which my kids would love. I really had a hard time to make them eat vegetables. This recipe was one of their favorites, burger patties. I tried to make burger patties out of eggplants and the outcome was so good and my kids loved it so much.

Ingredients:

4 pcs. medium sized eggplants

5 tablespoons flour

3 tablespoons cornstarch

1 tsp. pepper

Seasonings
-
Crispy Fry seasonings (optional)

1 medium egg
-
1/8 kg. ground pork meat
Preparation:
First is to boil the eggplants until soft.
Set aside, when it’s already cooled down peel off the eggplants. Then mashed it using a fork.
I added the egg and pepper then mix.
Add the flour, cornstarch, seasonings and mix it thoroughly.
I also added half of this crispy fry seasoning; we use this when we are cooking fried chicken but this is optional.
Lastly, add the ready-to-use ground pork.
Cooking time:
Add enough oil in a pan to cook the patties. I shaped it on circles so that it would really look like burger patties. Cooked in a low setting of fire only, until each side becomes the color of a patty burger.
Then we have it, my very own eggplant patty burgers. I made a total of 6 pcs. on the ingredients provide. This was perfect with a ketchup dipping sauce.
My first born eat it happily, he really thought it was a burger patty. It was really tasty and you can’t tell if there’s an eggplant on it. We had a delicious eggplant burger patty for lunch today 😊.
