Hello Foodies! Today was a new day again. What I’m going to share you is a recipe that was a snack at the same time nutritious because its main ingredient was a squash.
As a mother, I really had a hard time for my kids to have them eat vegetables. So, I always make a snack that would have a vegetable or fruits on it. This snack became their one of their favorites since I cooked it for them.
Come and join me how I prepared this snack called “okoy” on our local.
Ingredients:

½ kg. squash

1 cup flour

½ cup cornstarch
-
Pepper
-
Onions
-
Garlic
-
Moringa leaves
-
Seasonings
-
Salt
Preparation:
First step is to grate the squash and put it in a bowl. Finely chopped the moringa leaves, garlic and onions.
In bowl, mix all the above ingredients. Gradually add some water, until the texture becomes a little watery but not too much, enough to make small circles like fish balls.
Cooking time:
In a pan add oil enough to cooked the “okoy”.
It must be cooked deep fry. When the “okoys” turned golden brown. It’s already cooked. Set aside and let it cool for a while.
For the sauce, I only used vinegar, add some salt, pepper and sugar to balance the taste and of course I added a lot of onions. This was a perfect sauce for this snack for me. But my kids just prefer to eat this even without a sauce on it because it was already tasty even without a sauce.
Then we have it my simple recipe for squash, perfect snack for your kids if you want them to eat some vegetables. This was also bought on streets and they add other ingredients like small shrimps and if you want more vegetables, you can add carrots on it.
