Mirchi Vada
Rajasthani Mirchi Vada recipe is made by stuffing roasted potato masala in thick, less spicy chillies and then wrapping it in gram flour batter and frying it. It is eaten with coriander mint chutney or tomato sauce. It is very special for those who like spicy food.
Ingredients:-
1) Thick size green chillies - 250 grams
2) Boiled potatoes - 250 grams
3) Gram flour - 2 cups
4) Paste of green chillies, ginger, garlic and onion
5) Mustard - 1 tsp
6) Asafoetida - 1/4 tsp
7) Cumin seeds - 1 tsp
8) Red chilli powder - 3 tsp
9) Coriander powder - 2 tsp
10) Turmeric powder - 1 tsp
11) Salt - 1 tsp
12) Garam masala - 1/2 tsp
13) Chat masala- 1/2 tsp
14) Lemon juice- 1 tsp
15) Coriander leaves- finely chopped
16) Ajwain- 1/2 tsp
17) Oil- for frying
Method :-
Firstly take gram flour and add red chilli, turmeric, salt, ajwain and 2 tsp oil in it
By adding water little by little prepare a thick batter like pakora batter
And keep it covered for 10-15 minutes
Now heat oil in a pan and add mustard seeds, cumin seeds and asafoetida and let them crackle
Then add (green chilli, ginger, garlic and onion paste) and fry
Then add mashed boiled potatoes and all the dry spices (red chilli powder, coriander powder, turmeric powder, salt, garam masala, chaat masala)
Mix well, roast for 2 minutes, turn off the gas and add lemon juice
Add coriander leaves
Keep aside to cool
The stuffing is ready
Wash the chillies
Cut it lengthwise from the middle and take out the seeds
Now stuff the chopped chillies with potato Fill it
Press and wrap the chilli in the gram flour batter
Put it in hot oil
Turn it on both sides and deep fry till it becomes golden brown
Prepare all the Mirchi Vada in the same way
Now take them out and keep them on tissue paper so that their extra oil gets drained
Eat and feed the ready Mirchi Vada with green chutney and tomato sauce
