Malpua

This is a pancake sweet snack or a sweet dish which is famous and liked all over the country. It is made in Rajasthan on Hariyali Amavasya. I have also made it on this festival and make it every year. Malpua is also made in the same way with wheat flour.

Ingredients:-

1) Maida (plain wheat flour) - 1/2 cup

2) Milk - 1/2 liter

3) Cream - 1/2 cup

4) Ghee - for frying

5) Dry fruits - for garnishing

For sugar syrup

1) Sugar - 1/2 cup

2) Water - 1/2 cup

3) Cardamom powder - 1/4 tsp

4) Saffron - a few strands

Method:-

First of all, for sugar syrup, 1/2 cup sugar

Add 1/2 cup water

Put it on to boil and keep stirring till the sugar melts. Now add cardamom powder

and saffron

Add it and mix it. Do not make it into a stringy syrup. If it becomes sticky, turn off the gas or boil it for 5 minutes.

For the batter:-

In a vessel, take 1/2 cup all purpose flour,

1/2 cup cold full cream milk

Add 1/2 cup fresh cream and mix well. Keep stirring this mixture continuously for 5 minutes so that it becomes light and mixes well.

There should be no lumps in it

Now keep the batter covered for 30 minutes

After 30 minutes mix again. Now take a nonstick pan which should be flat from the bottom, add ghee in it and heat it

And take a big spoon of batter and put it in hot ghee, it will take the shape of a small puri

And it will start to sizzle in ghee

Fry on low flame till it becomes golden on both sides

It will take 4 minutes to fry one Malpua

When it turns golden, take it out and put it hot in sugar syrup

After 5 minutes, take it out of the syrup and put it on a net

So that the extra syrup drains out, prepare all the Malpuas in this way. 7 pieces are prepared in 1/2 cup.

Now decorate them with your favorite dry fruits

These can be kept in the fridge and eaten for 6-7 days
