Today’s lunch my son loves

Today's task was to make lunch for myself and my son. I decided to go with his favorite meal – chicken drumsticks marinated my way (oil, Vegeta, a bit of chili, mixed pepper, ground paprika, and a little salt). I coated the drumsticks in the marinade and let them sit for only two hours since we were already hungry.

Then the drumsticks went into a pan with a mix of a little olive oil and sunflower oil. I covered them with a splatter screen so the oil wouldn’t spray everywhere while cooking. They cooked for about 25 minutes on low heat, with two to three turns during cooking.

In the meantime, I made something I absolutely love – and ever since I made it the first time, the kids love it too – rice with butter. When the rice is done, I put a piece of butter on top (homemade if I have it, otherwise store-bought), cover it with the hot rice so it melts, and then mix everything together. The taste is perfect, and no matter how much I make, it always gets eaten.

On the side, just to make sure it’s not too dry, I made a green salad, seasoned with a little salt, oil, and balsamic vinegar. Lunch was perfect, and there was even one drumstick and a bit of rice left for my wife when she got home from work – hahah.

I hope you like this and that you’ll try out the marinade recipe if you haven’t already, and definitely try the rice with butter – I love it. Oh, and don’t forget to salt the water when cooking rice! I don’t know what ratio you use, but I always go 3:1 – one cup of rice to three cups of water.
