My family eats Lentils soup regularly, we love it! It's a satisfying soup full of nutrients. There are different types of lentils such as brown, green, white and yellow. Our family's favourite is the yellow lentils. They may differ in colour but they do have a similar taste, texture and even nutrient content. It’s a delicious soup that is so simple and easy to prepare. Just bring lentils to boil, simmer and incorporate any vegetables you like, examples are sweet potatoes, squash, eggplant, carrots, moringa etc.
Ingredients
Water, 2 - 3 cups Yellow lentils, 1 cup Turmeric powder, 1 tsp Ground black pepper, a pinch Salt, ½ tsp Onion, quartered Tomatoes, quartered Sweet potatoes, quartered Moringa leaves, fresh or dried
Preparations

Wash the lentils and discard the water. Soaking the lentils for a couple of hours can make it quicker to cook.

Add the turmeric, black pepper, salt, tomatoes and onion into the lentils.

Bring to a boil, cover with lid and then simmer for 30 minutes. Add more water if necessary. stirring occasionally to avoid burning at he bottom.

Add the sweet potatoes or other vegetables you prefer. Cook for 15 minutes

Once the lentils are cooked and thickens, Add the Moringa leaves and mix gently to combine. Turn off heat.

Serve it over with rice. Grind it in a food processor if you prefer it smooth in consistency.
Moringa leaves is a superfood.
For more additional flavour, you may use rice water instead of water. You can also add Pandan leaves while cooking or topped with fresh coriander leaves or toasted garlic.
