I am rooting for Pancit or noodles so I decided to make it today. I am lucky that I have most of the ingredients at hand, actually you can put any vegetables you prefer, cauliflower, broccoli etc) .
And so, Without much further ado, I am excited to share my version of my Pancit, Just the way I like it.
Ingredients:
Noodles (made of mung beans) Water, 2 cup or more Garlic, minced Onion, diced Celery, chopped Broccoli, florets Carrot, jullienne Green beans, chopped diagonally Capsicum, chopped Cabbage, shredded Snap peas Chicken breast Oyster sauce, 2 tbsp Soy sauce 2 tbsp Salt Pepper
Preparations:
- Saute the chicken breast until brown. Set aside.
- In a pot of boiling water, add in all the chopped vegetables and boil for 2 - 3 minutes. Drain and soak the vegetables in cold water. Set aside.
- Saute garlic, onion and celery until aromatic.
- Next, in the pot add the oyster sauce and soy sauce, and mix to blend, Then Add water and stir.
- Drop in the noodles and stir to cook until the water evaporates.
- Adjust your seasoning. Add the boiled vegetables and the cooked chicken, you can mix or just add it on top.
It's easy and so delicious, especially with the noodles made of mung beans.
