Magic Shikika Recipe: Adobong Eggplant with Eggs ☺️😋❤️

Hope all are safe and well! ☺️❤️🙏

Cooking simple foods for viand is not an option for me. It’s really a necessity. Especially when the budget is tight or when we only have a few ingredients left in the kitchen, I try to make the most of what’s available. ☺️❤️

Yesterday was one of those days. We still had a few eggplants and some eggs left, so I thought of cooking something quick and simple, the Adobong Eggplant with Eggs. ☺️❤️

This dish is nothing fancy, but that’s the beauty of it. My recipes are just simple homemade dishes, nothing extra special except for the fact that it’s me who made it. 😊 And honestly, that’s what makes cooking meaningful to me. ☺️❤️

Since there were only two of us to feed, me and my sister, I cooked just enough for my lunch and dinner for the two of us. No need to prepare a lot. Simple meals are sometimes the most satisfying. ☺️❤️

Ingredients:

✓ 5 pcs eggplants, sliced ✓ 2 pcs eggs ✓ 1 onion, diced ✓ 1 tomato, diced ✓ 3 cloves garlic, minced ✓ A little portion of ginger, minced ✓ 30g oyster sauce ✓ 3 tbsp soy sauce ✓ 1 tbsp vinegar ✓ A little bit of ground pepper ✓ A bit of cooking oil to saute

Procedures:

  2. Wash the eggplants, onion, tomato, ginger, and garlic.
  3. Slice the eggplants and remove any damaged parts eaten by worms. Peel and dice the onion and tomato, then peel and mince the garlic and ginger. IMG_20250827_112923.jpg
  4. Heat cooking oil in a pan over medium heat.
  5. Saute garlic, onion, tomato, and ginger until aromatic. IMG_20250827_113304.jpg

That’s it! As simple as that, our viand for yesterday’s lunch and dinner was ready. Nothing fancy, but it really filled our tummies and satisfied our cravings. I actually love how the eggplants soaked up the flavors of the soy sauce, vinegar, and oyster sauce. The added eggs made the dish more filling too. 😋❤️

Sometimes, it’s not about having the most expensive ingredients or the grandest recipes. It’s about making the most out of what’s available, cooking with love, and sharing it with the people you care about. ☺️❤️

So that’s the Adobong Eggplant with Eggs! It's very simple dish that turned out delicious and comforting for me and my sister. Another meals solved* moment for us! ☺️❤️
