I want to share another dish I cooked from the anchovies my sister bought. The other day, I only used half of them for my Crispy Anchovies Omelette. The remaining half I decided to cook in a different way, the Anchovies Adobong Paksiw with Eggplant. This was actually our viand yesterday, good for both lunch and dinner. ☺️
Anchovies are such a versatile fish. They may be small, but they’re full of flavor. Growing up in a fishing village, I’ve eaten them in many forms such as fried, omelette, paksiw, or sometimes just dried. It always brings me back to simple days by the sea. This time, I wanted to make a dish that’s savory and a little tangy, something that pairs well with rice. ☺️
So, let me share with you how I made my Anchovies Adobong Paksiw with Eggplant. ☺️❤️😋
Ingredients:
✓ 1 glass anchovies (around 200g, heads removed) ✓ 2 pcs eggplant ✓ A little portion of ginger ✓ 1 small red onion ✓ 3 cloves garlic ✓ Ground pepper (a little) ✓ Salt to taste ✓ 2 tbsp oyster sauce ✓ 3 tbsp soy sauce ✓ 5 tbsp vinegar
Procedures:
- Wash and drain the anchovies.
- Wash, peel, and mince the onion, ginger, and garlic.
- Wash and slice the eggplant. Remove the portion that was damaged by worms.
- In a pan or pot, combine the anchovies, eggplant, onion, ginger, and garlic.
- Add salt and ground pepper.
- Pour in the vinegar, soy sauce, and oyster sauce.
- Mix everything well and cook over low-medium heat.
- Let it simmer until fully cooked and the soup lessens.
- Serve hot with rice.
This dish turned out really tasty! ☺️ The vinegar gave it that classic paksiw flavor, while the oyster sauce and soy sauce added a nice balance of savory sweetness. The eggplant also absorbed all the flavors, making every bite delicious. 😋
We had this for lunch and dinner, and it was more than enough to satisfy our cravings. For lunch, I even paired it with coffee, simple joys that made the meal extra comforting. ❤️
That’s what I love about anchovies. Even with just a few basic ingredients, you can make a dish that feels hearty and flavorful. Truly, it proves that you don’t need fancy ingredients to enjoy a good meal. Sometimes, the best recipes come from what you already have in your kitchen. ☺️❤️
