Magic Shikika Recipe: Eggplant Omelette β€οΈπŸ˜‹

The other night's dinner, I prepared a very simple dish using what we already had at home. My sister brought some small-sized eggplants the last time, and there were still six pieces left in the fridge. I thought of making an eggplant omelette since I also had eggs available. It was an easy choice that's affordable, filling, and something that always reminds me of home. ❀️

I started by taking out the remaining eggplants and the two eggs from the fridge. First, I washed the eggplants thoroughly, then placed them in a pot with water to boil. I let them cook until they became soft enough. Once done, I carefully removed them from the boiling water and set them aside to cool down.

After the eggplants cooled, I peeled off the skin. I always make sure to check the inside of the eggplants to see if there are any worm damages. Fortunately, they were fine this time, but if there are parts damaged by worms, I simply remove them.

Next, I cracked the two eggs into a bowl. I added a bit of salt, pepper, and my favorite seasoning Magic Sarap to give it more flavor. I beat the eggs well until everything was mixed evenly. After that, I dipped each boiled and peeled eggplant into the egg mixture, making sure it was fully coated.

In the same pan I used to boil the eggplants, I heated some oil. Once the oil was hot enough, I placed the eggplants coated with egg mixture into the pan. I fried them in two sets, flipping each side until they turned golden brown and cooked through. I repeated the process until all the eggplants were done. In total, I got 3 sets of omelette, each made with 2 eggplants.

For serving, I paired the eggplant omelette with soy sauce and calamansi as a dip. That simple combination really brings out the flavor and makes the dish more appetizing. We enjoyed it hot, fresh from the pan, and it was enough to satisfy our hunger for the night.

This dish may be simple, but it proves that even with just a few ingredients, you can prepare a delicious meal. With six eggplants and two eggs, I was able to make a viand that filled our stomachs and didn’t cost much at all.

Sometimes the simplest meals are the best. Last night’s eggplant omelette was proof. It's just 2 eggs and 6 eggplants turned into a satisfying dinner. β€οΈπŸ˜‹
